What is lemongrass?
Lemongrass, is a stiff sharp-bladed, perennial evergreen grass that is native to India and it is widely used as a herb in Asian cuisine. It grows, 3- to 6-foot-tall .
Health Benefits of Lemongrass - Lemongrass or citronella is one of those astounding natural herbs that is often used in Thai, Malaysian and Vietnamese foods. Australians discovered the herb, grown and use it used in the preparation of home-grown meals.
The herb is available at most nursery's and can be grown in the garden or in a pot. The enthusiast of Asian Cooking say it is a must have herb, because of its fragrant citrus flavour and ginger trace.
Lemongrass is also known by a number of names 'Sweet Rush', sometimes called 'fever turf' and citronella.
The citronella aroma is often used in candles, perfumes and soaps. Citronella is well known for its soothing properties it is said to ease stress and tension. It is used by some as a light style insect repellent. Then the scent of lemongrass gives a great deal of health benefits.
Lemongrass has antibacterial and antifungal properties, then when blended with pepper, they say can be a treatment for menstruation troubles and can help overcome queasiness. Lemongrass when made up as a tea can have a diuretic effective.
When it concerns PETS the scent of the citronella is sometimes used settle dogs down and reduce barking.
The lemongrass can be used as a facial cleanser it will brighten the skin and clear away bacteria then leaves behind a soothing scent.

How to Extract the Flavour
All that is needed select some lemon grass leaves and make a mixture by boiling, let it cool and then consume the liquid. Making a lemongrass tea is more fun and enjoyable -
1. Use a medium size saucepan and water and bring the water to a boil.
2. Add the selected lemongrass leaves to the water and boil rapidly for 5 minutes.
3. Reduce the heat to a lower setting and allow to it simmer the now tea for an additional 5 minutes.
4. We now need to remove the lemon grass leaves, so strain the stalks from the liquid then stir in a selected amount of sugar until it dissolved.
5. The tea can be served warm, or chilled or just pour it over ice.
How to Choose
Just about all the lemongrass's flavour is concentrated in its lower, cane-like stalks. So if picked from the garden we need to trim of the leafy tops, leaving just the short spiky blades still attached. When buying from the markets or store they usually sell them already trimmed.
Find the firm, pale-green stalks with fat, bulbous bottoms of the lemon grass plant, the ones with the fresh-looking tops, they sometimes could be little dry but should not be desiccated or yellowed.
The two ways to prepare lemongrass for and each determines how the lemongrass is handled. With teas, broths, soups, and braising type liquids, we start by trim off the lemon grass spiky tops and the bases. We need to squash or crush the stalks to release their aromatic oils that can be done with the side of a flat knife. Next cut stalks into say thumb size pieces. It is a good idea to remove the pieces before drinking or eating as they are a bit woody or just leave them and drink or eat around them.
